Hey Jax,

If you are looking for perfection lime paint/milk paint is not the way to go. Milk paint has the look of an old plaster finish, including the splotches and unevenness of the color. This can be a great look but the room must lend itself to the finish or be decorated around it.
I would paint one accent wall with the milk paint and live with it for a while. This will be the true test to determine if you want to invest more time and money in this type of finish.

I use milk paint quite a bit and have never experienced the problems Michael has.  I buy the powder in bags and mix it myself.  Check out these sites for more information.  www.realmilkpaint.com
